What should I put in an 800 mL whiskey barrel dispenser?

Bourbon and rye are popular first choices. Rum, tequila and batched cocktails like a Boulevardier also pick up pleasant oak flavor.

• First fill: season the barrel with water so the wood seals.
• Timing: taste every few days at first, because small barrels work quickly.
• Care between batches: keep it filled, or rinse and store it carefully so the staves don't dry out and shrink.
• Verify: spigot, stand and char details aren't given here.
